WebThere are two places that water is lost between the initial volume and pre-boil: grain absorption and mash tun losses. So the recipe is written to assume 2.5 gallons lost between those two (and unless it specifies, you don't know how it's split). If that doesn't match your system, the volumes (and therefore gravities) will be off.
